During the Lenten season (for those who practice) it gets tough to find non-meat meals ..... I&#39;m not that big on standard fish, but I&#39;m a big fan of
most shellfish .... and I love me some spicy food!


I got the idea watching the Food Network ...


Anything? Is this too random an item?


Right now I&#39;m considering ordering some live crawfish ...

I make Jambalaya from time to time (from a box, add meat, lol) .... I&#39;ve found that substituting Spicy Italian Sausage for the Andouille actually gives it
a good flavor and some extra spice, and just so happens I prefer that type of sausage.

For the first time I think I&#39;ll stick to just using the mix and not messing with it .... I was thinking about boiling some potatoes and corn on the cob
along with the Crawfish.

I have no clue how much 10lbs of Crawfish actually feeds... so far I have 5 interested in doing a Cajun Crawdad Boil .... hopefully by the end of this month

I recommend their cookbook, very user-friendly, and get a bottle of Joe&#39;s Stuff. You&#39;ll get some ideas from the cookbook. Very adaptable to outdoor
cooking. Ask for one of their catalogs and just browse the shop. I&#39;m sure a recipe for making your own crab boil mix is in there. Your first try I&#39;d
just follow the directions that come with the crawfish.

When they say sausage they usually mean andouille (dry and spicy) or boudin (fresher, made with rice &amp; veggies). Andouille can be found up here.
Russo&#39;s in Grand Rapids has it, they specialize in wine and ethnic groceries. Find a similar store or specialty meat market. As you are going to use for
Fridays just toss in some shrimp instead. Although with 10#&#39;s of Crawfish you won&#39;t need a lot more &#39;meat.&#39;

Now the story of the crawfish as I recall it goes something like this.

One of the groups that settled N&#39;awlins were some French fishermen who moved (or were moved) from eastern Canada (Acadia - Nova Scotia, New Brunswick, Pr.
Edward Island) after the British took over after the French &amp; Indian War in the 1750&#39;s. Now these fisherman quickly adapted to their new home and the
Arcadians soon became Cajuns.

But what about the crawfish. Well some of the lobsters from that region north of Maine missed the Acadians, so they followed them, and by the time they made
that long trip they were just shadows of the huge lobsters they were - the crawfish.

I like the New Orleans School of Cooking &amp; their online store Louisiana General Store for my Cajun shopping. Joe is the head of both, and makes Joe&#39;s
Stuff a great all-purpose cajun seasoning mix. One of the few things to do in N&#39;awlins before noon is to take a cooking class at their place in the Jax
Brewery in Jackson Square. Reservations suggested, the two hour class shows you how to prepare usually a four course meal of Jambalaya, Gumbo, Pralines &amp;
Shrimp Creole, it costs about the same as a inexpensive restaurant, you get to eat the meal, and beer or beverage is included.
